Salt and Pepper Tofu

Ingredients
Tofu marinade:
400g extra firm tofu (pressed and cut into ½-inch cubes)
1/2 tsp sea salt
1/2 tsp garlic powder
1/3 tsp white pepper
1/3 tsp ginger powder
1/4 Sichuan peppercorn powder
10ml neutral oil
60g cornflour
Oil spray
Veggies:
1 sweet pepper, diced small
2 spring onions finely chopped
4 large cloves, finely chopped
1 chilli, seeds removed, finely chopped
Splash coconut oil
Salt and pepper seasoning:
3/4 tsp sea salt
1/3 tsp five spice
1/4 tsp white pepper
1/3 tsp garlic powder
1/4 tsp Sichuan peppercorn powder
Method
1. Pat dry your tofu cubes.
2. In a large mixing bowl, combine tofu seasonings. Add cubed tofu and gently toss. Add oil and sprinkle in cornflour 2 tbsp a time til coated evenly.
3. Spray air fryer basket with oil. Add tofu and spread the pieces evenly. Air fry at 200°C for 10 mins. Carefully flip the tofu, air fry for another 5 mins. Tofu should be golden brown and a little crisp outside. Set aside.
4. Chop spring onions, garlic, and chilli, add to a bowl. Set some spring onions and chilli aside for garnish. Prepare salt and pepper seasoning in a separate bowl.
5. In a preheated pan, add oil and fry veggies over medium heat for 1 min. Don’t burn!
6. Add the tofu. Sprinkle in half the salt and pepper seasoning. Toss to combine for 30 seconds.
7. Serve with chips or rice and a side of Mayflower medium curry sauce. Garnish with remaining spring onion and chilli. Enjoy!
