Salt and Pepper Katsu Curry Noodles
A bold and protein-packed salt and pepper katsu curry noodle bowl, inspired by @slimwithkatex. Crispy chicken, rich curry sauce and ready in around 30 minutes.

Ingredients
Ingredients (serves 2):
– 2 chicken breasts (300g)
– 1 packet of fresh egg noodles
– 100g Mayflower curry powder
– Chopped spring onion
– 15g crushed cornflakes
– 1 packet of beansprouts
– 2 tbsp dark soy sauce
– Sesame seeds
– 2 tbsp salt and pepper seasoning

Method
1) Coat chicken breasts in a mixture of crushed cornflakes and salt + pepper seasoning. Air-fry at 180 for 18 minutes.
2) In a pan, stir-fry beansprouts, noodles, and soy sauce. Mix Mayflower powder with boiling water, add to the pan, and simmer.
3) Slice cooked chicken, serve with sesame seeds and chopped spring onions.
