Mel’s Chick ‘n’ Rice
This quick and tasty Chicken & Rice recipe, created by our very own Mel Bennett brings together tender diced chicken with mushrooms, peas, and chunky onions in a rich Southern Style gravy. Serve over long grain rice for a comforting, no-fuss fakeaway in around 30 minutes.

Ingredients
Serves 3-4
- 2–3 chicken breasts, diced
- 100g frozen peas
- 1 large white onion, chunky diced
- 100g button mushrooms, quartered
- 2 cups long-grain rice
- 50g Mayflower Southern Style Gravy Mix
- 270ml cold water

Method
- In a wok heat a tablespoon of oil, add the onion and fry until brown. Next add the peas and mushrooms and stir fry for 2 minutes. Lastly add the chicken and stir fry until cooked.
- Meanwhile, whisk together 50g of Southern Style Gravy Mix and 270ml water in a saucepan, bring to the boil and then simmer on a very low heat for 2-3 minutes.
- Add the sauce to the wok and stir.
- Serve with rice and ENJOY!
