Chicken Katsu Curry Burger

Ingredients
- 180g Chicken Breast
- 1 Egg
- 30g Panko Breadcrumbs
- 2 tsp Garlic Granules
- 2 tsp Mild curry powder
- 1 tsp Cumin
- 1/2 tsp Turmeric
- 1/2 onion
- 2 Seeded Brioche buns
- Lettuce
- 50g Mayflower curry powder

Method
- Butterfly the chicken breast so it opens out evenly.
- Crack your egg into a bowl and whisk.
- Mix the panko breadcrumbs and the seasonings in a different bowl.
- Coat the chicken breasts in the egg followed by the breadcrumb mixture.
- Add to the air fryer for 15 minutes at 190C or until cooked through.
- Meanwhile fry your onions.
- Mix the Mayflower curry powder with water to form a thick sauce.
- Add a spoonful of curry sauce to either side of the bun, top with lettuce, the cooked chicken, onions and the remaining curry sauce.
