Chicken Katsu Curry Burger

Make @georgiaskitchen_eats's crispy panko chicken burger with Mayflower curry sauce, ready in around 30 minutes. A simple, tasty fakeaway made at home.

Ingredients

  • 180g Chicken Breast
  • 1 Egg
  • 30g Panko Breadcrumbs
  • 2 tsp Garlic Granules
  • 2 tsp Mild curry powder
  • 1 tsp Cumin
  • 1/2 tsp Turmeric
  • 1/2 onion
  • 2 Seeded Brioche buns
  • Lettuce
  • 50g Mayflower curry powder

Method

  1. Butterfly the chicken breast so it opens out evenly.
  2. Crack your egg into a bowl and whisk.
  3. Mix the panko breadcrumbs and the seasonings in a different bowl.
  4. Coat the chicken breasts in the egg followed by the breadcrumb mixture.
  5. Add to the air fryer for 15 minutes at 190C or until cooked through.
  6. Meanwhile fry your onions.
  7. Mix the Mayflower curry powder with water to form a thick sauce.
  8. Add a spoonful of curry sauce to either side of the bun, top with lettuce, the cooked chicken, onions and the remaining curry sauce.
