Chicken and Prawn Fried Rice
A low-calorie chicken and king prawn fried rice packed with veg, sesame oil and bold flavour. Inspired by @kates_foodieworld and perfect for a healthier fakeaway at home.

Ingredients
- 1 Small Onion, finely diced
- 1/2 Red Pepper, diced
- 1/2 Yellow Pepper, diced
- 1x tsp Sesame Oil
- 250g Chicken Breast Fillet, diced
- 25g Peas
- 20g Sweetcorn
- 100g Raw Jumbo King Prawns
- 260g Basmati Rice (cooked)
- 1x tbsp Dark Soy Sauce
- ¼ tsp Chinese 5 Spice
- 2 Eggs

Method
- To a frying pan lightly fry the onions & peppers till soft.
- Add the sesame oil and chicken, brown for a few minutes
- Stir in the prawns, cooked rice, peas & sweetcorn.
- Add the soy sauce and Chinese 5 spice
- Make a well in the middle of the pan and add the eggs. Once the egg starts to cook, scramble and mix in the rice.
CURRY SAUCE
20g Mayflower curry powder, 150mls water. Mix and cook on a low heat until thickened.
