Cajun Dirty Fries
Crispy Cajun dirty fries loaded with bacon, peppers, melted cheese and Mayflower southern style gravy. Inspired by @_laurenslosingit and perfect for a comfort-food fakeaway.

Ingredients
- Potatoes, cut into chips
- Cajun seasoning
- Red pepper, chopped
- Onion, chopped
- Garlic, chopped or minced
- Bacon, chopped into small pieces
- Cheddar cheese, grated
- Mayflower Southern Fried Gravy (prepared as directed)

Method
- Chop the potatoes into chips and parboil in salted water until just tender.
- Drain well, then lightly coat the chips in Cajun seasoning.
- Air fry at 200°C for around 25 minutes, shaking halfway, until golden and crispy.
- While the chips are cooking, add the chopped red pepper and onion to a frying pan and cook for a few minutes until softened.
- Add the garlic and cook for a further minute.
- Add the chopped bacon to the pan and cook, stirring regularly so nothing sticks. Add a splash of water if needed — no oil required.
- Once everything is cooked, plate up the chips.
- Sprinkle over grated cheddar cheese, spoon over the bacon and veg mix, then finish with another layer of cheese.
- Serve hot with Mayflower Southern Style Gravy poured over or on the side for dipping.
