Cajun Dirty Fries

Crispy Cajun dirty fries loaded with bacon, peppers, melted cheese and Mayflower southern style gravy. Inspired by @_laurenslosingit and perfect for a comfort-food fakeaway.

Ingredients

  • Potatoes, cut into chips
  • Cajun seasoning
  • Red pepper, chopped
  • Onion, chopped
  • Garlic, chopped or minced
  • Bacon, chopped into small pieces
  • Cheddar cheese, grated
  • Mayflower Southern Fried Gravy (prepared as directed)

Method

  1. Chop the potatoes into chips and parboil in salted water until just tender.
  2. Drain well, then lightly coat the chips in Cajun seasoning.
  3. Air fry at 200°C for around 25 minutes, shaking halfway, until golden and crispy.
  4. While the chips are cooking, add the chopped red pepper and onion to a frying pan and cook for a few minutes until softened.
  5. Add the garlic and cook for a further minute.
  6. Add the chopped bacon to the pan and cook, stirring regularly so nothing sticks. Add a splash of water if needed — no oil required.
  7. Once everything is cooked, plate up the chips.
  8. Sprinkle over grated cheddar cheese, spoon over the bacon and veg mix, then finish with another layer of cheese.
  9. Serve hot with Mayflower Southern Style Gravy poured over or on the side for dipping.
